Lost Recipe - Chicken Curry

Ok, catch-up time. This is a recipe my mother made when I was a child. It comes out of a Quick-n-Cheap cookbook published by Reader's Digest in the mid-eighties, though it's current incarnation is fairly changed. First, the groceries.


The Groceries

Ingredients:
  • Chicken, some, cooked.
  • Onion
  • Green Apple - ingredient most likely to be omitted.
  • Oil, enough (not shown)
  • Flour, about 3 tablespoons (not shown)
  • Chicken broth, 1.5 cups
  • Greek yogurt, 1/2 cup (originally was half-and-half)
  • Curry powder (2 T.)
  • Cayene Pepper (very little)
  • Ginger (1 t.?)

  • 1. Chop onion and apple and saute until soft.


2. Add flour, broth and creamy substance. Thicken.



3. Add all seasoning - curry, cayenne, ginger, salt. Add chicken, cover, cook low 5-10 minutes. Serve over rice.
